I’ll be honest, I’ve been hating on “oopsie rolls” which the TikTokkers now call “cloud bread” for a decade. I never used to get it right, and it always ended up a huge mess. But for this strawberry shortcake recipe I really wanted something like angel food cake, and the only thing I could think of was to double down on my efforts to make an approachable cloud bread and I am SO happy I did. Like so, SO happy. It might be the best dessert I’ve ever made, so I thought it would be appropriate to share in my first VIP issue. Easy Keto Strawberry Shortcake
If you’ve ever made a meringue, you’ll be familiar with this recipe. To make the shortcakes, we’ll whip sweetened egg whites until they’re thick, then bake them. Topped with strawberries and fresh whipped cream, they make perfect little strawberry shortcakes! By the way, yes, corn starch is necessary here, other thickeners don’t hold up the same way.
