Triple-Garlic Keto Lobster Scampi & Other Garlicky Dishes
In this issue, we celebrate national garlic month with some of my favorite garlicky keto dishes.
National garlic month is here. For Italians like myself, this might as well be a real holiday. I’m excited. And so this week I’m sharing a new lobster scampi recipe, and a bunch of other garlicky favorites!
As you might notice from the format change, I’ve switched my email over Substack instead of my old email provider who was robbing me blind. If you no longer want to receive this keto newsletter, the unsubscribe button is at the bottom of the email as always if you want to jump ship! I appreciate your attention here either way.
P.S. Don't forget to follow me on Instagram and on Facebook! That's where I share a lot of in-progress stuff and ask for feedback so I can make the kind of stuff you want to eat. :)

Weekly tip: At a little less than 1 carb per clove, garlic is not only a great way to add flavor to your food, but it also is said to be great for reducing cholesterol and high blood pressure while combating illnesses such as Alzheimer's, Heart Disease, and Cancer. Plus, it's full of healthy antioxidants.
Triple-Garlic Keto Lobster Scampi
Preparing a lobster dish at home feels just a little fancy doesn’t it? I love lobster, and what I love most is that you can buy it frozen to prepare easily at home without having to boil and crack open one from the lobster tank at the grocery store.
This dish is totally delicious, but like most lobstery things, it’s a little on the pricy side. My frozen lobster was $20 (but buy-one-get-one — woo!) and I also happened to be lucky enough to find Kohlrabi linguini, all prepared for me in the produce aisle. So for me, this recipe was incredibly easy.
Do I think it’s still worth the effort if you have to spiralize a kohlrabi and pluck the meat out of a lobster yourself? I mean, sure, if you want to, but make sure you’re doubling the recipe and feeding the whole family, because it’s THAT good.
But let’s talk about the dish itself — pure garlicky goodness. Garlic is cooked three ways into this dish, a trick I learned from Kenji Lopez-Alt in my favorite cookbook, The Food Lab. If you’re a cooking nerd, you’ll love it, it’s a masterpiece of all the best ways to cook all the things.
Getting back to that garlic — we are simmering smashed garlic in oil until crispy, then discarding it (or saving it for later like I do, yum) then sizzling a little sliced garlic, and finally a quick flash in the pan with grated garlic. Holy moly, pure garlic heaven. Then, you’re just cooking the noodles in chicken broth until it absorbs, and tossing the rest together fairly quickly after that. You can’t go wrong with this dish.
Kohlrabi is one of the more neutral veggie noodles, so it goes great in this dish and lets the lobster and garlic take center stage. I hope you enjoy it, here’s the full recipe:
