VIP Recipe: Bacon Ranch Zucchini Fries
In this savory snack, zucchini is tossed in prepared ranch dressing, then rolled in bacon before being cooked in the oven. Served with a little ranch for dipping on the side, it's for everybody!
Hey there VIP! Don’t you just love when a keto recipe is really any “everybody” recipe? As I work on my summer keto cookbook (free for you, thanks for subscribing!) I’ve been trying to develop recipes that the whole family can enjoy. Generally I use my three-year old as the deciding factor, and let me tell you, today’s recipe that will be in the summer cookbook was a HUGE favorite for everyone in the house.
The zucchini sticks marinate in a bit of your favorite keto ranch dressing, then it’s wrapped in bacon and cooked. To top it off, you get to dip it in ranch dressing again. You don’t have to be on keto to love these, promise!
Keto Ranch Dressing?
If you want to make ranch dressing, feel free to go for it, but lately, my daughter doesn’t give me that luxury, so I say go for the easy stuff! Some good keto ranch dressings are below, (note: affiliate links):
Tesse Mae’s Classic Ranch or Organic Creamy Ranch (1g carb per 2 tablespoons) is a more traditional creamy ranch dressing.
Primal Kitchen’s Ranch (2g carb per 2 tablespoons) is not much of a creamy ranch, and wouldn’t be my first choice for this particular recipe but it could work in a pinch.
Yo Mama’s Ranch (1g carb per 2 tablespoons) markets itself as a keto dressing and has no added sugar, though they do use canola oil which is usually a no from me.
If you fall into the “lazy keto” category (no judgment, many long-term keto folks identify this way because it’s more sustainable):
Hidden Valley Ranch’s Simply Ranch isn’t terrible, it does have 1g of added sugar, and 1g carb per tablespoon though.
Sir Kensington’s Avocado Oil Ranch has 1g carb per two tablespoons, but they do add coconut sugar.
That’s about all I’ve got for prepared keto dressings you can buy, but it’s a good list!
