Howdy!
Now that so many of us are beginning to gather again with the warm weather, I am so excited to begin our family Sunday Suppers tradition that I had started right before the pandemic started.
I haven’t had a chance to write it up yet, but I also wanted to share the most delicious grilled eggplant recipe (2.3g net carbs per cup of eggplant) I made over the weekend, which I plan to make at our first Sunday Supper of the year. It’s super simple and it reminds me of when you get bread and garlic oil at a restaurant. It’s packed with flavor and the texture of the eggplant is absolutely perfect!
First, preheat your grill to medium heat. Slice your eggplant into rounds or into long strips at about 1/4” thick, and discard the top/bottom of the eggplant. Sprinkle with salt to dampen the bitterness a bit and let rest for about 15 minutes. In the meantime, add 1/3 cup olive oil to a high rimmed plate, mixed with 5 (fresh!) cloves of garlic that you can grate with a microplane or cheese grater. Add 1/4 tsp freshly ground pepper, and a handful of basil, chopped. Mix it up. Now when your eggplant is ready, dip each slice in the oil mixture and toss on the grill, and then grill for about 5 minutes on each side but most importantly grill until they are fork tender, and brush with oil if they start to dry out. When they’re done, toss them back on the plate with the oil mixture (add more oil if needed) and brush again, sprinkle with salt if needed, then enjoy! Served warm, they taste just like bread soaked in garlic oil, one of my favorite past-time foods and a dish I want to share with everyone!
